Homemade Mayonnaise

One Egg

Two tablespoons of Lemon juice

One tablespoon of Water

One tablespoon of Stone ground mustard

One teaspoon of Salt

One cup of Olive or Avocado oil

Immersion blender

I like to use the Zip Lock brand of plastic container to make this mayo. They are cylinders and hold about 3 cups and have a screw cap. Crack the egg into the container and add all of the other ingredients. Place the immersion blender all the way to the bottom of the container then turn it on high. Let it run for at least 30 seconds. You can tilt the container so that all of the oil gets incorporated. That’s it. Store in the same container in the refrigerator. I estimate a batch is good for a week.
