Mexican Fritatta

1 & 1/2 pounds ground beef (80/20 is fine)

1/2 c chopped onion

1 - 2 chopped jalapeños

Handful of chopped cilantro

2 c shredded cheese (cheddar, Mexican, your choice)

2-3 tablespoons chili powder

1/2 teaspoon cumin powder

1/2 teaspoon garlic powder

1/2 teaspoon black pepper (cayenne pepper too for extra spice)

1 teaspoon salt

6 eggs - beaten

Brown the ground beef in a large deep skillet. Toss in the onion and jalapeño at the same time to let it sauté. Add the spices and stir. You don’t have to drain the fat.

Add the cilantro and a cup of cheese and stir until melted.

Add the beaten eggs and stir.

Top with the remaining cup of cheese.

Cover and keep on the stove top at low heat for about 15 min until set.

Serve in wedges with sour cream, salsa, avocado, cilantro, lime.
